PIE 101: Basic Double Crust Crimp and Finish The most important thing to remember is that you’re trying to seal the filling into your crust. Any leaks of your filling will cause sticking or burning and you don’t want either of those for a great pie. As you are crimping and finishing, continue to think about the fact that you’re trying to pinch those crusts together to prevent leaks, that will help you to focus on the most important part: the seal. ##qckg##pie101##piecrust##crimping##gardentokitc

Allow me to introduce you to the Double Crimp. This is how I finish the vast majority of my pie crusts. At this point in the season, I must’ve crimped about 200 pies this exact way. I can do it with my eyes closed. I love it so much, sometimes I call it #theroxanacrimp As the name suggests, double crimping simply means… you crimp twice. Start with a single crimp, then refine it by crimping again, right on top of the first pass. That second round sharpens the edges, tightens the curves, and gives

My go-to pie design starts with a standard crimp. I like to use two fingers on one hand to anchor the dough against the rim of the pie plate while using my other hand to pull the dough inwards. After creating a traditional crimp around the rim of the pie, I go back with my thumb and press into each flat section to round it out, creating a petal shape. Then I take both thumbs and place them side by side in each round portion and rock them together to close off the space between the petals. Take a

So many Thanksgiving pies benefit from a parbake. I follow Erin McDowell’s method from The Book on Pie, which is surprisingly simple to do 🥧🥧🥧🥧🥧⁣ ⁣ A Few Notes:⁣ ⁣⁣ • Afte you fill your pie shell with weights, I do not think it's necessary to chill it again — I find the crust holds its crimping pattern just as well if it has not been chilled as when it has been chilled. ⁣ ⁣ • Parbake your pies on a parchment-lined sheet pan to prevent your oven from becoming a smoky mess. ⁣ ⁣ • If you have
