This sheet pan tofu with sweet potatoes and black beans is an easy vegan dinner recipe. I season the tofu and potatoes with cumin, oregano, paprika and a few more dried spices. While they're in the oven, I quickly make chimichurri with chopped parsley, garlic and shallots. I use the last few minutes of oven time to warm up the beans on the pan.
